Naturally one of the key ingredients in cake making is flour! Now many people think that flour is just flour and that its all much of muchness...well I am here to tell you that flour is so changeable and can completely make the difference between a good cake and a bad one!
After many years making cakes I have found that skimping on your main ingredients does you no favours! Now I only use Caudwell's Mill flour in all my wedding cakes as its just the best flour and what's even better its milled just down the road from me!
Caudwell’s Mill at Rowsley is a unique, Grade II* listed historic roller flour mill. Powered by water from the river Wye. The present mill was built in 1874 by John Caudwell and run as a family business for over a century.The mill was purchased by a charitable trust and has been operated by them for over forty years. At Caudwell’s Mill, grain was milled by the same process used at the giant modern mills which now provide most of the flour for our bread, but here production is on a much smaller scale and at a speed that is both easier to understand and does not damage the flour. You can take tours around the mill and its got a great little shop where you buy you can buy your flour and other baked goodies, a tea room and a gift shop. It's definitely a great place to explore and I love being able to support not only a local business but a piece of Derbyshire heritage too!
I use self raising or plain cake flour in my recipes and the flour from Caudwell's produces the most fluffy light sponges everytime. I love it!
